Channa Masala

Chhole bhature is an absolutely decadent treat that is a must-try if you visit Delhi. It is one of Delhi’s many Punjabi specialties. Channa masala recipe is a popular north indian curry recipe which is widely appreciated all over India. The main ingredient for this exotic curry recipe is chickpea or chana which is pressure cooked with onions and tomatoes. Don't forget the Indian spices added before cooking this amazing recipe. Here is my recipe for Punjabi chhole, guaranteed to bring the flavours of Delhi streets right into your home. Serve them with bhatura or rice . I served with hot rotis.

Ingredients:
  • 1 cup chole / chickpea, soak for 7-8 hrs
  • 4 tbsp oil 
  • 1 bay leaf
  • 1 cinnamon 
  • ½ tsp cumin seeds
  • 1 onion, finely chopped
  • 1 tsp ginger-garlic paste
  • 2 tomatoes, finely chopped
  • 1 tbsp kashmiri chilli powder
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • ½ tsp cumin powder
  • salt to taste
  • ½ tsp garam masala
  • 2 cups water
  • 2 tsp coriander leaves, finely chopped

Method : 
  1. Firstly, in a cooker heat oil using more oil makes delicious dhaba style chole masala.
  2. Saute bay leaf, cinnamon stick and cumin seeds till they turn aromatic.
  3. Then add finely chopped onions and ginger-garlic paste. saute till it turns golden brown.
  4. Add tomatoes and saute till they start releasing oil.
  5. Add chilli powder, turmeric, coriander powder, cumin powder, garam masala and salt. saute for a minute.
  6. Then add soaked chickpea & saute for a min.
  7. Further add 2 cups of water. Add more water if you like it to be more gravy.
  8. Give it a good mix. and check the seasonings. make sure the masala water to be slightly salty as chole will absorb while cooking.
  9. Pressure cook for 7-8 whistles on medium flame.
  10. Garnish with chopped coriander leaves.
  11. Finally, serve hot with poori / chapathi / bhatura.
