Let me start by saying that Hakka Noodles are my all time favourite. Really, I would eat them for breakfast, lunch, dinner…any time of day. NO time is a wrong time to eat noodles. We would always wait for birthdays or other special occasions to eat “chow mein”. These hakka noodles are popularly known as chow mein in India, roadside version  - Chow mein is spicy, full of veggies and very delicious.  I did not use cabbage in this recipe because first I didn’t have it the day I made these noodles and second I don’t like cabbage that much in my noodles. All the veggies are cooked on high flame so that they remain crunchy. I prepared this recipe as Valentine's day Special for my Hubby💓 along with Eggless Semolina Cake  and Mushroom Manchurian Dry (Will post the recipe soon).. Today we will learn how to make Hakka Noodles following this easy recipe.




Ingredients :

Servings 2-3
  • Hakka Noodles -150 grams 
  • Oil - 5 tbsp
  • Onion - 1 finely sliced
  • Ginger Garlic Paste - 1 tsp (You can also use chopped ginger garlic to enhance the taste)
  • Carrot - 1 (Cut it into thin strips) 
  • Capsicum - 1 medium size (You can use Colour of your choice)
  • Soya sauce -2 tbsp 
  • Red Chilli sauce - 2 tbsp 
  • Salt and pepper powder according to the taste
Method :
  1. Cook noodles according to the package instructions. Drain the cooked noodles, and rinse them with cold water. Set aside.
  2. Heat oil in a wide pan on high heat, first saute the sliced onions, ginger garlic paste for about 1 minute
  3. Add thin strips of carrots, and sliced red bell pepper/capsicum. Stir fry for about two minutes, do not overcook the vegetables. Vegetables should have some crunch.
  4. Add noodles, salt, soya sauce, and chili sauce, pepper & toss them together and stir-fry them for about a minute.
  5. Hakka noodles are ready. Serve Hot!!

Note
  • You can add veggies of your choice
  • Do not over cook the noodles, toss noodles with a tsp of oil and keep it aside.This is done to prevent the noodles from sticking together.
