Delicious Potato Gravy | Aloo Tamatar Ki Sabzi (Potatoes cooked in a Tomato Gravy Sauce)


Aloo Tamatar Ki Sabzi 

My mom was the inspiration behind this dish. She actually makes this dish often. This dish was so delicious I ended up eating most of it. I figured out the ingredients and attempted this delicious dish. Aloo Tamatar ki Sabzi is a classic combination and a popular North Indian dish. This Potato gravy is a very simple and quick recipe which goes well with roti and pooris. I prepare this as a side dish not only for roti but also for peas pulav, vegetable pulav and vegetable biriyani.  Do try this simple easy recipe and you will love it.

Ingredients :
Servings 3-4
  • Oil 1.5 tbsp
  • Ginger Garlic Paste 2 tsp
  • Onions  2 medium finely chopped
  • Jeera/Cumin Seeds  1 tsp
  • Turmeric Powder 1/2 tsp
  • Potatoes 3 big diced
  • Tomatoes 2 finely chopped
  • Dhania Powder 2 tsp
  • Chili Powder 1 tsp
  • Water 1.5 – 2 cups
  • Coriander Leaves finely chopped
  • Salt to taste

Method : 
  1.  Heat up a pot on medium heat, add oil, add jeera seeds once its splutters, add turmeric powder.
  2. Add the onions, ginger, garlic, and salt. Saute until onions are golden.
  3. Add the chopped tomatoes, chili powder, dhania powder, garam masala. Cover with a lid on low-medium heat. Cook till tomatoes turns mushy
  4. Add the cubed potatoes. Season the potatoes with salt.
  5. Add water, enough to cover the potatoes. Pressure cook for 2 whistles. Open once the pressure is released.To ensure the dish is cooked, make sure the potatoes are fork tender. 
  6. Add chopped coriander leaves to garnish.
  7. Serve Hot with rotis/pooris/rice.
