Goan Mushroom Vindaloo
Mushroom Vindaloo is a Goan Cuisine.. Widely in Goan recipes, Spice and flavors are intense..While meat-based preparations are marinated in the vindaloo spice paste overnight, this is not necessary for vegetables You can try the same with chicken, mutton, prawn or any vegetables.This recipe tastes good with Button Mushrooms.. You can have it along with Chapathi , Roti or Naan..

Ingredients :
Servings : 4
For Vindaloo Paste
- 7-8 Red chilies, deseeded ( Soak the red chillies in 1/2 cup hot water for 20-30 mins)
- ¼ tsp Turmeric Powder
- 1 tsp Cumin Seeds
- 1 tsp Ginger Garlic Paste
- 1 tbsp Coriander Seeds
- 3-4 Cloves
- 10 Black peppercorns
- 7 Garlic cloves
- 1½ tbsp Vinegar
- ½ tsp Sugar
- 7 to 8 tbsp of water for grinding the paste
- 200 gms Button Mushrooms rinsed & chopped
- 1 medium sized onion – finely chopped
- 1 medium sized potato cubed & deep fried
- 2 green chilies finely chopped
- 2 tsp Coriander leaves finely chopped to Garnish
- 1 cup of Water (According to the desired gravy consistency)
- Salt to taste
Method :
- Dry roast Red chilli, Coriander seeds, Black peppercorns, Cloves, Cumin seeds for 1-2 min. Grind them along with Ginger Garlic paste, Garlic cloves, Vinegar, Turmeric powder, Sugar with little water. (Vindaloo masala paste is ready as shown in the below picture)
- Heat oil in a pan and deep fry the cubed potatoes and keep aside.
- In the same pan, add finely chopped onions & fry till golden brown.
- Add chopped mushroom along with 2 chopped green chilies, Saute well
- Add the prepared vindaloo masala paste & stir well for 7-8 mins on a low flame
- Then add 1 cup of water to gravy. (According to your desired consistency)
- Vindaloo Gravy will start to thicken. Add the fried potatoes & Saute for a minute.
- Garnish Mushroom Vindaloo with Coriander leaves
- Serve Goan Mushroom Vindaloo with hot steamed rice/naan/rotis/paranthas
