Quick & Easy Lemon Rice

Lemon Rice is a flavorful tangy twist to plain white rice.  It is a great travel food and can be used for packed lunch. Some of the other varieties of rice from the South are Coconut Rice, Yogurt/Curd Rice, Sesame Rice, Tomato Rice, Tamarind Rice etc… I will mention these recipes in my upcoming blog posts soon.  Try this quick, easy recipe that is so appealing. 



Ingredients : 
Servings : 2
  •    Rice -1 cup
  •    Sesame seed oil -1 tsp for rice
  •    Lemon -1 (juicy one)
  •    Cashew-nuts- 5 -6
  •    Peanuts (Optional) - 2 tbsp
  •    Salt to taste
For Seasoning :
  •    Oil-3 tsp
  •    Mustard seeds -1 tsp
  •    Urad dal  -1 tsp
  •    Bengal Gram Dal/Chana dal/kadalai paruppu -1 tsp
  •    Red Chilies -1 crushed
  •    Asafoetida -a pinch
  •    Green chilies -2 finely chopped
  •    Turmeric Powder -1/4 tsp
  •    Curry leaves - few
Method :
  1. Cook rice in such a way that each grains are separate. Spread it on a plate, mix a tsp of oil to it, so that the grains will not stick together.
  2. Saute cashew nuts, peanuts in 1/2 tsp oil until golden brown and keep it aside.
  3. Heat oil, add mustard seeds, once mustard splutters , add urad dal, chana dal, red chillies crushed and asafoetida. Saute for 2-3 seconds, Then add green chilies, turmeric powder, curry leaves. 
  4. Squeeze lemon juice in a cup, add salt to it. Mix well and add it to the rice.
  5. Add the seasoning and cashew nuts also to the rice and mix well. Taste and see. If required add more salt and lemon juice.
  6. Serve hot with Potato Fry & Papad!!
