Spicy Pepper Vegetable Fried Rice
Veg Fried rice is very flavorful and aromatic with great blend of spices. I love this dish very much and whenever we go out to restaurants in India this is one sure item i order. When i started to cook , i wanted to prepare this by myself and so i got this recipe from my mom. This is now a favorite dish in our family and everybody loves it...This goes great with any spicy gravy / manchurian... Try this out and Hope u all will like it...
Ingredients :
Servings : 3-4
- Basmati rice - 1 ½ cup
- Oil -2 tsp for cooking rice
- Beans - 10-15 finely chopped
- Onion - 1 medium size finely chopped
- Carrot - 1/4 cup finely chopped
- Cabbage - 1 cup shredded (optional, I didn't used in this recipe)
- Capsicum -1/4 cup finely chopped
- Spring onion greens - 2 ½ tbsp finely chopped
- Oil - 5 tbsp
- Ginger Garlic Paste - 2 tsp
- Salt and Pepper powder to taste
- Soak the Basmati Rice in water for 15 mins. Cook adding 3 cups of boiling water and a tsp of oil. (Ratio 1 cup of rice = 1 ½ cup of water)
- Fluff it with a fork and spread it on a plate to cool. The cooked grains should be separate.
- Heat oil in a pan and add ginger garlic paste , Saute for a few seconds. Then add beans & fry for a few seconds, followed by carrot, cabbage and spring onion greens.
- Fry in high flame for 1 to 2 mins and add the capsicum. Do not saute it for a long time as the colour of the veggies will change.
- Add salt and pepper powder & Switch off the stove
- Add cooked rice. Mix well & Serve hot with any spicy gravy or manchurian.
