Soya Chunks Briyani

Soya Briyani is a delicious recipe made of rice, soya chunks and a variety of spices. Compared to the other varieties of rice dishes like Pulao, Fried Rice, Biryani has a stronger taste of curried rice due to a higher amount of spices, mint leaves, coriander leaves, Soya Chunks cooked in gravy of spicy yogurt and served with basmati rice topped with fried onions..This goes well with raita/any other spicy gravies. Lets learn how to prepare Soya Briyani.



Ingredients :
Servings : 4
  •    Oil – 3 tbsp
  •    Cloves -3
  •    Bay leaf -2 
  •    Soya Chunks -10-12
  •    Cumin seeds – 2 tsp
  •    Basmati rice – 2 cup (Soak for 20-30 mins before cooking & wash it 2 times)
  •    Onion – 2 (1 finely chopped & 1 sliced long & fried)
  •    Green chilli - 2 (add more if you want it more spicy)
  •    Ginger-garlic paste - 3 tsp
  •    Tomato-1 (finely chopped)
  •    Mint leaves – handful
  •    Coriander leaves – handful
  •    Lemon juice -1 tbsp
  •    Turmeric powder – a pinch
  •    Red chilli powder -1 tsp
  •    Coriander/Dhania powder – 2 tsp
  •    Garam Masala - 1 tsp
  •    Briyani masala – 2 tsp (Available readymade in the market. You can use any of your choice) 
  •    Curd - 4 tbsp
  •    Salt as required


Method :


  1. Bring water to boil, add soya chunks, salt and switch off the flame. Let it remain soaked for 30 minutes. Then squeeze out the water 2 times. Cut it into 2 and keep it aside. (You can marinate the soya chunks with little briyani masala, salt and sour curd if preferred.)
  2. Heat oil, add cloves, cumin seeds and bay leaf saute for a 2-3 seconds, then add onions and saute till it turns transparent.
  3. Now add ginger-garlic paste, green chillies and saute for a few more minutes. 
  4. Add chopped tomatoes, turmeric powder, chilli powder, coriander powder, biryani masala, garam masala, curd, mint and coriander leaves, marinated soya chunks &  needed salt and saute for a few more minutes. Then add 3 cups of boiling water, drained rice and lemon juice.( Check for salt by tasting the water add a pinch of briyani masala after transferring it to cooker).
  5. Transfer all the contents to a rice cooker and switch on the cooking mode. After it comes to keep warm mode, switch off and mix well gently. Transfer the rice to a hot pack or any other vessel to prevent the bottom from getting burnt.
  6. Garnish with fried onions and serve hot with  cucumber & onion raita.
  7. Enjoy your delicious Soya Briyani!!
