Easy Carrot Halwa / Gajar ka Halwa in Pressure Cooker
Carrot halwa in pressure cooker easy and take less time. This simple recipe made with carrot, milk and sugar. Carrot halwa is one of the most popular Indian sweet. I have so many fond memories of my mom’s Carrot Halwa- it was simply amazing. My mom always made it on the stove-top in a slow way. I was finally able to adapt her recipe to the Instant Pot with my pressure cooker. It reduces the cooking time and eliminates the initial stirring time, which to me, is a huge plus.
Ingredients
Servings :3-4
- Grated carrots - 3 cups
- Milk -1 cup
- Sugar -1/2 cup
- Ghee - 4 tbsp
- Cashew nuts -12
- Raisins -3 tbsp
- Wash, peel the skin and grate carrots finely
- Heat 2 tbsp of ghee and fry cashews & raisins till they puff up & keep it aside.
- Add 1 tbsp of ghee, then add the grated carrots and saute on low flame for 5 minutes.
- Add 1 cup of milk and mix well. Cover the Pressure Cooker lid and cook for 2 whistles on medium heat.
- Let the pressure go down by itself.
- Open the lid & let it cook on high flame till the moisture evaporates.
- Once the milk dries up, add sugar and continue to cook on medium flame until the mixture is thick.
- Add a tbsp of ghee and cook for a further 3-4 minutes stirring continuously until the mixture thickens.
- Add cashew nuts, raisins, cardamom powder, mix well and cook for another 1 minute.
- Serve this Gajar ka Halwa Hot.. I personally love it hot...
